Corona Cupcakes with Captain Morgan Lime Frosting

My neighbor turned 50 earlier this month and her party was this weekend.  Since I love baking I offered to make cupcakes.  The party was going to be mostly adults so I was trying to find something a little unique.  These turned out great and were really easy!

1 Boxed White Cake Mix
1 Bottle of Corona
Juice from 1 lime
Prepare cake as directed by the box instead of water add 1 bottle of Corona and juice from 1 lime
(pour slowly or you will get a lot of head from the beer)

Bake as directed on the box


Let the cupcakes cool and frost!  I made a Cream Cheese Frosting infused with Lime Juice and Captain Morgan Lime Rum! It turned out fantastic!

1 Stick of Butter
1 8oz Block of Cream Cheese
5 Cups of Powdered Sugar
(less if you want it thinner more if you need a thicker frosting)
Juice from 1 Lime (add more if you like)
1 1/2 T Captain Morgan Lime Rum (add more if you like)


If you are going to use a Cream Cheese Frosting also and are not going to serve the cupcakes right away they should be refrigerated. Or you could hold off frosting until right before you serve and just keep the frosting in the fridge and cupcakes sealed tight in air tight container. Remove the frosting from fridge a few min before you are going to frost so it is easier to pipe or spread.

Robot 1st Birthday Party

So my baby is about to turn one and this weekend we had a wonderful small birthday party.  Our theme was robots.  I purchased a wonderful kit from emmiecakes on Etsy.  I tend to over due just about everything when it comes to party planning.  Everything turned out so cute I had to share!

Robot "smash" cake was a hit.  Everyone was upset they had to eat cupcakes.

He was so polite when eating it.  Just a finger of frosting at a time never did dig in.


All in all we had a great party!  Rowan was a trooper (he has been sick for 2 weeks and still has an ear infection). We served chili and snack food and I made grilled cheese for the 2 kids. We wanted to keep it simple and it worked out great.  Next year we will hopefully be finished with our basement remodel so we have more room for people.  If you are interest in a Robot theme I suggest emmiecakes she did a great job!

This is me

I am new to blogging, but I wanted somewhere to share what I love with others who like/love the same things.  Here is a little about me.

Things I love: being a mom, cooking, baking/cake decorating, bright colors, crafts, cute fabrics, my sisters (they are some crafty bitches), my dog and cat, home remodeling, parties, organization (though I am the most unorganized person you will meet), sleep, coupons, farmers markets and my wonderful boyfriend Sam.

Things I do NOT love: scary movies, feet, and rude people


Things I am addicted to:  pinterest (that is what made me want to start a blog after reading so many awesome ones),diet mt. dew, and interenet shopping.


Things I would like to know more about: photography, computer design ( i love all that crafty stuff on etsy but have no idea where to start) any suggestions?, and gardening


I hope to someday: Have a bakery/flowershop/store of everything i find amazing ( with my crafty sister and mom), have the time to do all the projects on my to do list, and win the lottery so the first two things can happen.

I am a 27 year old mom of an almost 1 year old little boy named Rowan who makes me laugh every day and love being a mom every second.  Who knew it would be this fun.  I work in a veterinary hospital which might be the greatest job in the world. And  most important my family is everything to me and without them I would be nobody.
